Mary-Ann Salcedo was the Sous Chef for the red kitchen in Hell's Kitchen, on the first three seasons.

Personality[]

As Gordon Ramsay's Sous Chef, Mary-Ann acts as his right-hand woman in service. She holds the same standards as Ramsay and will often get irritated by contestants' constant mistakes. While she is not as temperamental as Ramsay or Scott, she will call out chefs if they screw up or have a bad attitude. However, she will encourage some of them to do well as she did with Julia on Season 3 during the Army and Navy Service Challenge.

Main highlights per season[]

Season 1[]

  • On Episode 3, Mary-Ann argued with Jeff when the latter tried to excuse his poor performance due to never being on a cook line before. She also overheard him call Ramsay an "asshole" and when she confronted him about it, he said it to Ramsay's face and then walked out in the middle of service.[1]
  • On Episode 7, Mary-Ann and Sous Chef Scott were given the night off and were seen at the bar area for that night's service.[2]

Season 2[]

  • On Episode 1, Mary-Ann was seen helping Polly out when the latter struggled on appetizers. Later, Virginia wanted to replace the missing lamb sauce with veal stock, but she told her she could not do that.[3]
  • On Episode 4, she gave the red team their lunch by smashing a cake on the ground while they were doing their punishment.[4]

Season 3[]

  • On Episode 1, Mary-Ann expressed shock and horror over Joanna's terrible leadership skills during the red team's prep.[5]
  • On Episode 3, Mary-Ann urged Julia to take the leadership role for the Army and Navy Service Challenge due to her experience as a Waffle House Cook.[6]
  • On Episode 6, Mary-Ann told the red team to continue their great momentum in service.[7]
  • On Episode 7, Mary-Ann was annoyed at Bonnie since her actions caused the red team to take in the wrong deliveries. When she saw that the red team was not communicating, she reminded the three that they were still a team.[8]
  • On Episode 8, Mary-Ann was annoyed with Bonnie after she binned perfectly good monkfish during prep for service.[9]

Trivia[]

  • She is the first of the original staff members to leave the show.
  • She is the only Sous Chef who is of Filipino descent.
  • According to an interview, she actually hated her time on the show due to the lack of skills of the contestants and that she only did the show because Ramsay promised that he would help her set up her own restaurant. However, she later said that she would be okay with working on the show nowadays, since the show only takes contestants who have at least 2 years experience in professional cooking.
